Part A
- Hairtail: 500g
- Garlic: 15g
- Light soy sauce: 15g
- Cooking wine: 5g
- Spring onion: 5g (1 stalk)
- Ginger: 10g (2 slices)
- Salt: 3g
- Ground white pepper: 0.5g
Part B
- Water: 50g
- Aged black vinegar: 40g
- Caster sugar: 25g
- Light soy sauce: 15g
- Oyster sauce: 10g
- Ginger: 10g (2 slices)
- Spring onion: 5g (1 stalk)
- Cooking wine: 5g
- Dark soy sauce: 5g
Part C
- Cooking oil: 20g
- Cornstarch: 20g
Cooking Steps
Step 1/6
Prepare the ingredients according to the required ingredients, remove the internal organs of the hairtail fish, wash and cut into sections, cut the shallots into chopped green onions, slice the ginger, and slice the garlic;

Mix all of Part A, cover with plastic wrap, and marinate for more than 2 hours;
